I tried Edamame for the first time a couple of months ago with a beer and liked it. I had never heard of it, so I looked it up. It is just young green soy beans.
So, I went to the health food store and bought some dried soy beans and planted them. Today I harvested some and made edamame with them. You just ad a couple tablespoons of salt to a pot of water and bring it to a boil. Drop the bean in and boil for 5 minutes. Drain rinse with cold water sprinkle with salt and eat.

I love the taste it; BUT it's really bad for your thyroid. I read some books on hypothyroidism and soy is horrible. It has a lot of other bad things going on too. Just one of those GMO foods pushed by the big time big dollar agricultural and food industry! It's also one fo the highest foods for allergies! My grandpa used to say it was only fit for hogs!!. Maybe it's not even fit for them!

I subscribe to the "moderation in all things" theory. Anything you can name can be harmful if you over-dose on it. If your diet includes a little bit of a lot of things you will probably be O.K. I avoid peanuts, but the last time I had one I suffered anaphylactic shock. Not a fun thing. Won't try that again. Believe me, as long as emergency room personnel are being nice to you, you don't have to worry. When they figure that you're going to die anyway, the risk of your suing them is reduced and they do all kinds of rotten things. Vitamins are necessary, but most of them are also deadly poisons. If you enjoy something, then have some. You need and deserve some pleasure in your diet. Just remember that you can have too much of a good thing. June.
