A friend of mine gave me some milk kefir.  It's the consistency of yogurt, and she said she usually makes smoothies w/ it.  I was thinking I might try adding it to soup?  Or maybe making some yogurt ice cream?  I open for any and all ideas.  What do you all do w/ it?

I haven't tried it yet, but I'm thinking it'll be quite sour also.

How about sourdough bread?  I wonder if I could substitute kefir milk in the Artisan Bread in 5 Minutes a Day recipes...

Or use it in a soup recipe?

We consume it regularly.

DH's favored way is in a smoothie. I usually just combine 1 cup fruit puree to 1 quart milk kefir, but that's pretty tart. YOu can add honey, stevia, whatever you prefer.

I have used it to leaven bread. I have to be honest, when I did this, I didn't make notes. Basically, I combined a cup of yogurt with a cup of flour and let it sit (maybe over night...?). But then, I added the liquid to another 2 cups flour and 1 tsp salt, combined thoroughly (minimal kneading ala Artisan Bread in 5 Minutes a Day) and just watched it to let it rise. Shape, allow second rise and bake. I didn't note how long rising took. It took longer than storebought yeast, but it did rise just fine. Couldn't tell the difference in texture of the finished bread.

There are all kinds of recipies on YouTube.  I like mine with just fruit and a little stevia or honey.  My grandbaby loved it.  I quit making it though because I didn't drink enough to keep the cultures going.

Ggirl - that's the issue my friend is having.  It's grows so fast!  She put it in her fridge to slow it down.  But, she doesn't use nearly the amount that she produces.

I'm hoping that if I can find enough different recipes (more than just smoothies) that it'll be worth getting some of my own.
