I posted the same over on TSP.
Has anyone tried this? I haven't bought the book yet, but came across a blog about how to do it. It only takes 5 minutes a day if you are only talking about when you are actively touching the dough. Mixing the dough takes about 5 minutes, then on baking day it takes about 2 minutes to get the dough formed and into the oven. But it bakes for 30 minutes and it takes about 45 minutes for the dough to rise before baking.
This recipe is just flour, water, salt & yeast. The book is supposed to have 100 recipes in it, and they have a follow up book with "healthier" recipes.
It turned out pretty good in a free-form loaf.
But not as good in a loaf pan. I think that I didn't have enough dough. The batch makes up about 3 pounds of dough, so I only had 1 pound after making the loaves above. If I used 1.5 pounds, it would likely have filled the pan better. Next time I'll make 2 loaves in loaf pans.
