Yep, it's a lot like kombucha.

I don't really remember how long it took.  I seem to think it was at least a month, but I could be way off.

Ok then if it's a lot like kombucha, there's a good chance it will take---yeah---about a month at warmish temperatures. That's how long it takes for me to get kombucha vinegar in the summer.

So can I use a kombucha mother?

Acetic acid or vinegar is an aerobic reaction which is a fancy way of saying needs air (oxygen), so if you get fruit and mash it up or what ever you want the vinegar base to be and pump air into and keep it reasonable temperature room temperature will do should get some vinegar action. Depending on whatever strain you have producing the vinegar will depend on how high a % of vinegar you can get, probably increase this in a similar way to alcohol. I don't know what the laws are in your country so I would advise checking before doing. I am not encouraging anyone to do anything illegal Smiley.
