Karnie and I love to watch Hell's Kitchen and Masterchef. So, I keep on seeing this thing called Shepherd's Pie and it looks delicious. I'm not much of a cook, but it turned out really well and was pretty easy. I've never had it before, so I don't really know how it's supposed to taste. But, Karnie went back for seconds. So, at least it wasn't horrible! lol This is the recipe I used: http://www.foodnetwork.com/recipes/how-to-boil-water/beef-shepherds-pie-recipe/index.htmlThe only change I made, was using a mushroom medley, instead of just cremini mushrooms, and it turned out really well. So, what are y'all having?

Yesterday, most of the "discretionary" time in the day was taken up peeling and canning potatoes, so at the end of the day, I just browned some ground beef, stirred in some peeled/slice patty pan squash, one cup of rice, 1.5 cups water, 2 bouillon cubes, and 1 cup coconut milk. Put on the lid, turned down the heat, and ran to shower so I could vaguely resemble human when DH got home. Flavor wasn't too bad; all three kids had multip;el servings, ate until it was gone.
Today will appeal a little more to the adults, too: Carrots & potatoes in the crock pot, topped with a piece of meat (most likely beef; whatever's reachable in the freezer that will also fit in the crockpot) and tomato salad. Whoever processed this last beef we got must have cookware made for giants.

Last night I made fried chicken (gluten free) using sorgum flour and rice flour. It came out great. Tonight stir fry . Marinated chicken thighs with soy, asian seaorning garlic sesame oil salt pepper lots of ginger. I'll add portabella mushrooms - thinly sliced with stir fry veggies....

I grew up on shephards pie. It's an English staple.
At home, at school, I had so much shepards pie as I kid, I went off the stuff for years!

Crummy weather here so it's a comfort food week.
Sun- Paula Deen's BBQ Meatloaf Mon- The Lady's chicken noodle soup [another Paula favourite] Tue- Pasta e Fagioli with homemade French bread Wed- Herbed pork loin with potatoes and gravy Thu- TBD Fri- TBD
Thinking about Carbonnade a la Flamande (Belgian Beer, beef and onion stew) and Stuffed peppers for Thu/Fri. Will have to make a velvet crumb cake or cream cheese pound cakes somewhere in there too.
Manicotti and London broil braised in Guinness might be good this weekend with a peach cobbler or pots de creme.
What are y'all having ?

I love shepherds pie! Everything you all are cooking sure makes my mouth water.  I made stuffed peppers for supper tonight. Which reminds me, I need to get them out of the oven!

Ok it's Thursday and I'm beat. Tonight we're going to have meatballs and marinara over pasta. Thankfully I work from home a lot so no fear of simmering a sauce all day. Wow it's tiring cooking again, planning meals, shopping and all the cleanup; am in awe of those who do this for big families ! Two years ago in October I almost went septic and died from a major staph infection. This is the first time since cooking - had to stop because the high fever made it impossible to remember things and follow recipes. It takes longer now, but it's fun to be back at it. Now.... y'all need to give me some more ideas for meals

I'm having an easy to do recipie from the Phillipines... pork adobo. Basically get a pork butt cut it uo in bite size chunks. add garlic, vinegar salt and peppercorns. Cook it on the stove top. When almost done you can add a little soy sauce and cinnnamon (both optional). Simple but yummy. Chicken thighs are good this way too... I am also having bittermelon salad I made last night, Bitter gourd sliced really thin and onion diced tomatoes and Patis(fish sauce) I love that stuff!!

Yum Jake! Do you boil your meatballs right in your sauce or put them in the oven first? My Italian grandma put them right into the sauce. They were so tender that way!
We had spaghetti for supper too, but no meatballs. Just leftovers - the kids all had soccer practice, so not much time to cook tonight.
But, I did can a bunch of spaghetti sauce and tomato sauce today!

Thanks Renee - I normally bake them, but got kinda busy and put them right in the sauce. Sure adds a nice flavor to the sauce when you do it that way too. We have leftovers often - I actually like them better, and great lunches  Edit: Thinking of making another batch tomorrow to freeze. No 5$ footlong meatball sub loaded with GM junk and salt for me !

We're going to a potluck dinner at a friend's farm on Sunday. Our plan is to take swedish meatballs, made with grass fed beef.
They have farm to table dinners there pretty often, and we went a year or two ago. It was a garlic extravaganza! Everything, right down to the dessert, had garlic in it, and it was all delicious.
