Cool deal! I just canned my first peaches the other day, and learned a valuable lesson... when they say 1/2" of headspace, don't cheat...  Cry

That comment reminded me of the scene with the exploding peach preserves in the movie Holiday Inn.

I've really got to get back into waterbath canning.
It's so easy to do and doesn't require a lot of equipment.

Well, so I went to check my jelly this morning.  All but one sealed properly...but my jelly did not set.  I can either keep it for syrup or reboil it and add pectin I think???  Lips sealed

wish i had thought of that before i just finished a bowl of vanilla ice cream and peach cobbler after drinking 2 gallons of tea this afternoon while working outside and there's no wonder that i cant go to sleep and am answering at this early hour in the morning with little to no punctuation in a horrible runon sentence while thinking that perhaps i shouldnt have any more caffeine or sugar since i have to get up in 4 hours

Okay, so I just tried dumping the jars back into the pan, heating it to a rolling bubble then adding some more powdered pectin...I added about half of a box, which I thought may have been too much. I let that boil for one minute, spooned off the foam and then poured into NEW sterilized jars with new lids.  Processed them for 5 minutes, allowed them to cool overnight on a towel in the kitchen.  This morning I go to check it, and I still only have syrup.  It seems to be a bit thicker, but still pretty runny. I would say the consistency of molasses (If only I were making molasses) 

Goodness...I thought this would be easier.  What am I doing wrong!?!

I dont understand the headspace thing...I understand it cant be overfilled.  But does it have to be exact?

Don't get out the ruler and measure, but eyeball the headspace.  If you don't, it'll boil over the seal or explode.  I just boiled over my seals (yeah, another point - be sure the tops are screwed on TIGHT!) when I did spicy dilly beans a couple weeks ago...

Did you follow a recipe from the beginning?  As you add pectin, you'll also need to add sugar... I try not to use pectin of I can help it.
